Meatless Monday Recipes: Watermelon Wonder courtesy of inSHAPE

​We know that the likelihood of changing your eating habits on a holiday weekend is slight at best. However, this easy to prepare and delicious dish will be the highlight of your day.

We know that the likelihood of changing your eating habits on a holiday weekend is slight at best. However, this easy to prepare and delicious dish will be the highlight of your day.

We discovered the dish after reading about the digestive and diuretic benefits of mint leaves. Teas and mojotios normally come to mind when you think of mint, but these leaves are power-packed with cancer-fighters, inflammation-warriors, and immunity boosters.

Realizing that most of the mint we buy (usually for a few sprigs in a specific recipe) ends up going bad in the fridge, we investigated ways to use it as soon as possible. This event happened to take place in the early morning, so we foraged in the kitchen for a bit and came up with one of the simplest food treats we’ve had in months.

Ingredients:

  • 2 cups fresh watermelon, cubed
  • 1 cup cottage cheese
  • 1/2 cup fresh mint, chopped

Preparation

In a large bowl, fold all three ingredients together. Enjoy!
