Icing Free Carrot Cake

Ingredients

  • 4 eggs
  • 1 1/2 cups FAGE total yogurt
  • 1 cup dark brown sugar
  • 2 tsp vanilla
  • 1 tsp orange zest
  • 2 1/2 cups flour (we used combo of cake flour with coconut flour)
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • dash salt
  • 3 cups grated carrots

Preparation Preheat oven to 350-degrees. Use a little olive oil to grease your cake pan (we suggest a 13×9), then sift flour into the pan to coat. In a large bowl, mix together all of your dry ingredients and spices, then set aside. In a separate bowl, blend eggs, yogurt, brown sugar, vanilla, and orange zest. In small quantities, mix in dry ingredients. Finally, fold in carrots (and feel free to add some walnuts if you like). Place on the middle rack and bake for 45-50 minutes or until a toothpick is clean when inserted in to the cakes center. Remove and cool on an wire rack. Find out more about inSHAPE Fitness.
