What do you eat for breakfast typically? A bagel? Muffin? Cereal? And how about for that mid-afternoon snack? This tasty treat can even take its place on the table as a dessert. Stock up on the ingredients and give it a try.

Ingredients
- 1 cup plain Fage yogurt (Total or 2% – must be Fage)
- 1 cup milk (we used whole but you could use soy or almond)
- 1 tsp coconut extract
- 2 tsp honey
- 1/3 cup crushed coconut (dried, but not the flakes)
- 1/3 cup chia seeds
- 1 cup fresh berries
Preparation
Note: Must be prepared the night before!
Vigorously whisk the yogurt, milk, coconut extract and honey in a mixing bowl. Gently fold in the coconut and chia seeds. Cover tightly and place in the refridgerator. If you can, stir it once again about an hour or so later so that the chia seeds set well.
Chia seeds absorb liquid and create a natural gelatinous consistency. You truly need no other ingredients to make this delicious for everyone in the family. And if you are curious, chia seeds offer 42% of your daily fiber and along with the yogurt and milk, plenty of protein.
To serve, we dropped berries in the bottom of the bowl, poured the pudding over them, then added a few more on top. We drizzled a bit more honey on top to add a tiny bit more sweetness.
