Chef Recipes: Caramel Bacon Popcorn

A recipe for caramel bacon popcorn from Paul Turano of Tryst and Cook Newton.

Caramel Bacon Popcorn
Caramel Bacon Popcorn


  • 2 cups brown sugar
  • 1/2 lb butter
  • 1/2 cup light corn syrup
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp ground black pepper
  • 1/4 tsp ground juniper
  • 1/2 tsp ground clove
  • 1/8 tsp ground allspice
  • 1 tsp crushed red pepper flake
  • 7 qt popcorn
  • 12 slices rendered bacon crumbled


In a 4 qt heavy pan boil brown sugar, butter,  and salt to the soft ball stage (234-238 degrees). Remove from heat. Add baking soda, spices, bacon and stir well. Pour over popcorn. Bake at 200 degrees for 1 hour, stirring every 10-15 minutes.
