Ingredients

  • 3 tbsp olive oil
  • 3 cups chopped onions
  • 2 cloves garlic, minced
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 2 tbsp chopped sage
  • 2 tbsp chopped thyme
  • salt and pepper to taste
  • 4 cups vegetable stock
  • 2 cups chopped chestnuts
  • 1 1/2 loaves of bread, cubed (about 16 cups)
  • 2 eggs, whisked
  • 2 tbsp butter

Preparation

Drizzle olive oil into a saute pan over high heat. Saute onions and garlic until the onions are translucent, then add the carrots, celery, sage, and thyme. Add a little veggie stock (about 1/2 cup) to deglaze the pan.

In a separate mixing bowl, coat bread crumbs with whisked eggs, add veggies, and mix well, preferably with your hands. Add chestnuts and mix more.

Coat deep baking dish with butter, spread out the stuffing, pour the remainder of the veggie stock into the pan, and bake for 50-60 minutes until crispy on top.
