and when you whip them up quickly (it really is so easy to make homemade
waffles) you can use gluten-free or whole wheat flours for the fiber
and nutrient boost your body needs.

Enjoy them anytime, and when you whip them up quickly (it really is so easy to make homemade waffles) you can use gluten-free or whole wheat flours for the fiber and nutrient boost your body needs. Ingredients:

  • 2 cups flour (we used 1 cup all purpose and 1 cup coconut)
  • 1 tsp brown sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 1/2 cups whole milk
  • 1/2 cup Fage 2% yogurt
  • 1 tsp vanilla
  • 2 tomatoes, chopped
  • 1 cup fresh basil, chopped
  • 1 cup fresh mozzarella, chopped
  • balsamic vinegar for drizzle

Preparation:

Combine dry ingredients in a bowl and set aside. Whisk eggs in a separate bowl, then blend dry ingredients along with yogurt, milk, and vanilla. Turn on waffle iron. While it’s heating up, chop tomatoes and mozzarella then mix with basil.

Serve waffles with topping and drizzle with balsamic vinegar. Enjoy!
